Bulgogi, which literally means "fire meat," is one of Korea's most famous dishes. Thin slices of beef are marinated in a sweet and savoury mixture before being quickly grilled or seared over high heat until lightly caramelized. Despite its worldwide popularity, bulgogi is surprisingly simple to prepare at home, relying on just a handful of ingredients and a little patience while the marinade works its magic.
The hallmark of great bulgogi is balance. Soy sauce provides savoury depth, garlic and sesame oil add warmth and aroma, while grated Asian pear gently tenderizes the beef and contributes a subtle natural sweetness. Cooked quickly over high heat, the meat develops beautifully caramelized edges while remaining tender and juicy.
