How to Use Aquafaba

A How-To Guide from Module 05 — The Pulse of Life — part of the Grounded Kitchen Discovery Page series on high-nutrient foods, ancestral traditions, and kitchen strategies for long-term wellness. For most of culinary history, the liquid left over from cooking chickpeas was poured down the drain without a second thought. It was considered waste — the murky byproduct of a useful ingredient, good for nothing. In 2014, a French musician and software engineer named Joël Roessel discovered that this liquid could be whipped into a stable foam. In 2015, a vegan chef named Goose Wohlt refined the technique and shared it online under the name aquafaba — from the Latin aqua (water) and faba (bean). Within months, the plant-based cooking world had been quietly transformed. Meringues, mousses, mayonnaise, macarons — dishes that had always required eggs — were suddenly achievable without them. But aquafaba is more than a novelty or a vegan workaround. It is a genuinely useful kitchen ingredient with a range of applications that extend well beyond egg replacement. This guide covers all of them. What Aquafaba Actually Is Aquafaba is the cooking liquid from chickpeas — either the liquid from a can of chickpeas, or the liquid left in the pot after cooking dried chickpeas from scratch. During cooking, the chickpeas leach proteins, starches, and saponins (natural plant compounds with soap-like properties) into the surrounding water. It is this combination — particularly the proteins and saponins — that gives aquafaba its remarkable functional properties. The saponins are what allow aquafaba to foam and hold air when whipped, in much the same way that egg white proteins do. The dissolved starches give it body and help stabilise emulsions. The result is a liquid that behaves, in many culinary contexts, like a diluted egg white — with none of the cholesterol and none of the animal protein. Note: aquafaba is derived from chickpeas, which are a legume and a recognised allergen. It is not suitable for those with legume or chickpea allergies. Aquafaba from a Can vs. Homemade Both work, but they are not identical. Canned aquafaba is the most convenient and the most consistent. The liquid from a standard 400g can of chickpeas yields approximately 6 to 8 tablespoons — enough for most recipes. Look for cans with no added salt, or low-sodium versions, as excess salt can interfere with whipping. The liquid should be slightly viscous and pale golden — not watery and clear. Homemade aquafaba from scratch-cooked dried chickpeas is often more concentrated and more flavourful, but it varies depending on how much water you used and how long you cooked the chickpeas. If it seems very thin, reduce it gently in a small saucepan over low heat until it thickens slightly — this concentrates the proteins and improves its whipping performance. Cool completely before using. Storage: Aquafaba keeps in a sealed container in the fridge for up to 5 days, or can be frozen in ice cube trays (approximately 1 tablespoon per cube) for up to 3 months. Thaw in the fridge before using. The Four Applications 1. As a Whipped Foam This is aquafaba’s most dramatic application — and the one that made it famous. Whipped aquafaba behaves almost identically to whipped egg white: it starts liquid, builds volume as air is incorporated, and eventually reaches stiff, glossy peaks that hold their shape. How to whip it: Use a stand mixer or hand mixer with a clean, dry bowl and clean beaters — any trace of fat will prevent the foam from forming. Start on medium speed for 2 minutes, then increase to high. Soft peaks form at around 3 to 4 minutes; stiff peaks at 5 to 8 minutes. The foam is ready when it holds a peak that does not droop when you lift the beater. Cream of tartar: Adding ⅛ tsp of cream of tartar per 3 tablespoons of aquafaba stabilises the foam and helps it hold its structure longer. This is particularly important for meringues and mousses that need to set or bake. Use for: Meringues, pavlova, chocolate mousse (see the Aquafaba Chocolate Mousse recipe in the Module 5 collection), macarons, whipped cream alternative (sweetened with a little icing sugar and vanilla). Important: Whipped aquafaba is less stable than whipped egg white and will begin to deflate after 20 to 30 minutes at room temperature. Fold it into your recipe quickly and get it into the oven or fridge promptly. 2. As an Egg Replacer in Baking In baking, eggs serve multiple functions: binding, leavening, adding moisture, and contributing to structure. Aquafaba replicates the binding and leavening functions well, making it a reliable egg substitute in most baked goods. The conversion: 3 tablespoons of aquafaba = 1 whole egg2 tablespoons of aquafaba = 1 egg white Best applications: Cakes, muffins, quick breads, cookies, brownies, and pancakes. Works particularly well in recipes where eggs are primarily a binder rather than a structural element. Where it struggles: Recipes that rely heavily on egg yolks for richness and fat (like custards, crème brülée, or hollandaise) are not well suited to aquafaba substitution. For these, other plant-based alternatives (silken tofu, cashew cream) are more appropriate. Tip: For best results in baking, use aquafaba at room temperature rather than cold from the fridge. Cold aquafaba incorporates less easily into batters. 3. As an Emulsifier in Dressings and Sauces Emulsification is the process of combining two liquids that do not naturally mix — oil and water being the classic example. Egg yolks are the traditional emulsifier in mayonnaise and vinaigrettes because their lecithin molecules bind oil and water together into a stable, creamy mixture. Aquafaba’s dissolved proteins and saponins perform a similar function. Plant-based mayonnaise: Blend 3 tablespoons of aquafaba with 1 tsp Dijon mustard, 1 tsp apple cider vinegar, and a pinch of salt. With the blender running, stream in 200ml of a neutral oil (sunflower or light olive oil) very slowly — drop by drop at first, then in a thin stream. The mixture will emulsify into a thick, creamy, pale mayonnaise. Taste and adjust seasoning. Keeps in the fridge for up to 5 days. Creamy vinaigrettes: Add 1 tablespoon of aquafaba to any vinaigrette and whisk vigorously — it will help the dressing stay emulsified for longer rather than separating immediately. Creamy soups: A tablespoon or two of aquafaba whisked into a blended soup just before serving adds a subtle creaminess and body without dairy. 4. As a Binder in Savoury Cooking In savoury applications, aquafaba functions as a binder — holding together patties, fritters, and coatings in the same way that beaten egg does. Lentil and chickpea patties: Replace the egg in any patty or fritter recipe with 3 tablespoons of aquafaba. It binds the mixture without adding flavour, and the patties hold together well during pan-frying. Breadcrumb coating: Use aquafaba in place of beaten egg for coating vegetables or patties before breadcrumbing. Dip in aquafaba, then in breadcrumbs, and pan-fry or bake as normal. The coating adheres well and crisps up nicely. Glazing: Brush aquafaba over pastry, bread, or savoury tarts before baking in place of an egg wash. It produces a golden, slightly glossy finish — not identical to egg wash, but a very good approximation. This is normal and disappears almost entirely during cooking or baking. In cold applications like mayonnaise, the flavour is very mild and is masked by the other ingredients. Not all cans are equal. The viscosity and protein content of canned aquafaba varies between brands. If your aquafaba is not whipping well, try reducing it slightly in a saucepan to concentrate it, or try a different brand. It is not nutritionally equivalent to eggs. Aquafaba is a functional substitute, not a nutritional one. It contains very little protein compared to eggs and should not be relied upon as a protein source. Its value is culinary, not nutritional. Sugar stabilises the whip. When making sweet applications (meringues, mousse), adding sugar gradually while whipping — as you would with egg whites — significantly stabilises the foam and helps it hold its structure through baking. The chickpea gives you the bean for hummus, chana masala, and spiced toppings. The cooking liquid gives you aquafaba for mousse, mayonnaise, and meringue. Nothing is discarded. Everything is used.
