1 large head cauliflower, cut into florets

2 tbsp white miso paste

1 tbsp sesame oil

1 tbsp rice vinegar

1 tbsp maple syrup

1 tsp tamari (or soy sauce)

2 scallions, thinly sliced

1 tbsp toasted sesame seeds

Optional: chili flakes, fresh cilantro
Directions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together miso paste, sesame oil, rice vinegar, maple syrup, and tamari until smooth.
Add cauliflower florets and toss until evenly coated in the glaze.
Spread in a single layer on the prepared baking sheet — avoid crowding for best caramelization.
Roast for 25–30 minutes, flipping halfway through, until deeply golden and tender at the edges.
Transfer to a serving platter and finish with sliced scallions, toasted sesame seeds, and chili flakes or cilantro if using. Serve warm.
