Miso-Glazed Roasted Cauliflower with Sesame & Scallions

Ingredients

  • 1 large head cauliflower, cut into florets

  • 2 tbsp white miso paste

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tbsp maple syrup

  • 1 tsp tamari (or soy sauce)

  • 2 scallions, thinly sliced

  • 1 tbsp toasted sesame seeds

  • Optional: chili flakes, fresh cilantro

Directions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together miso paste, sesame oil, rice vinegar, maple syrup, and tamari until smooth.

  3. Add cauliflower florets and toss until evenly coated in the glaze.

  4. Spread in a single layer on the prepared baking sheet — avoid crowding for best caramelization.

  5. Roast for 25–30 minutes, flipping halfway through, until deeply golden and tender at the edges.

  6. Transfer to a serving platter and finish with sliced scallions, toasted sesame seeds, and chili flakes or cilantro if using. Serve warm.
