Barb's Zucchini Quiche

Ingredients

  • 3 cups zucchini, diced

  • 4 eggs

  • ½ cup Parmesan cheese, grated

  • ½ cup mild cheddar, grated

  • 1 large onion, chopped

  • 1 cup Bisquick

  • ½ cup vegetable oil

  • 2 tbsp fresh parsley, chopped (or substitute oregano)

Directions

  1. Preheat your oven to 350°F (175°C). Lightly grease two pie plates.
  2. Combine all ingredients in a large bowl and mix until well incorporated.
  3. Divide the mixture evenly between the two prepared pie plates.
  4. Bake for 30–40 minutes, or until the tops are golden and the centres are set. A toothpick inserted in the middle should come out clean.
  5. Rest for 5 minutes before slicing and serving.
