    • 1 tablespoon milk

    • ½ cup finely grated Parmesan cheese

    • 1 teaspoon garlic powder

    • 1 teaspoon onion powder

    • 1 teaspoon Italian seasoning

    • ½ teaspoon paprika

    • ½ teaspoon kosher salt

    • ¼ teaspoon freshly ground black pepper

    Directions

    1. Prepare the Zucchini — Preheat your oven to 425°F (220°C) or your air fryer to 400°F (200°C). Cut each zucchini into fry-shaped sticks approximately ½ inch thick. Pat thoroughly dry with paper towels.
    2. Prepare the Coating — In one shallow bowl, whisk together the eggs and milk. In a second bowl, combine the panko, Parmesan, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
    3. Bread the Fries — Dip each zucchini stick into the egg mixture, allowing excess to drip off. Coat thoroughly in the breadcrumb mixture, pressing gently so the coating adheres well. Arrange on a tray while finishing the remaining fries.
    4. Oven Method — Arrange the fries on a parchment-lined baking sheet in a single layer. Lightly spray with cooking spray or drizzle lightly with olive oil. Bake for 20–25 minutes, turning halfway through, until golden brown and crisp. For extra browning, broil for the final 1–2 minutes while watching carefully.
    5. Air Fryer Method — Arrange the fries in a single layer without overcrowding the basket. Lightly spray with cooking spray. Cook for 10–14 minutes, shaking the basket halfway through. Cook in batches if necessary.
