A simple, wholesome banana bread made with ripe bananas and pantry staples. Naturally sweetened, tender, and perfect for breakfast or an afternoon snack.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter or coconut oil
  • 1/2 cup maple syrup or honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt (1/4 tsp)
  • 1 1/2 cups all-purpose or whole wheat flour

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.

  2. In a large bowl, mash the ripe bananas until smooth.

  3. Stir in the melted butter or coconut oil, then mix in maple syrup (or honey), eggs, and vanilla.

  4. Sprinkle in baking soda and salt; stir to combine.

  5. Fold in the flour until just incorporated — do not overmix.

  6. Pour batter into the prepared loaf pan.

  7. Bake for 55–60 minutes, or until a toothpick inserted in the centre comes out clean.

  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
