Spiced Red Lentil & Coconut Soup | The Grounded Kitchen Members' Recipes

A foundational recipe from Module 05: The Pulse of Life. Red lentils are the most forgiving, fastest-cooking pulse in the pantry — and this soup is the clearest expression of what they do best. Inspired by the coconut-based lentil soups of Sri Lanka and South India, it is warming, nourishing, and ready in under 40 minutes with no soaking required. The lime at the end is not optional. Why This Recipe Red lentils collapse completely when cooked, turning a pot of spiced liquid into something thick, silky, and deeply satisfying without any blending required. This is their great gift: they thicken a soup from the inside, creating a body and richness that feels far more substantial than the ingredient list suggests. The flavour architecture here is Sri Lankan in spirit — coconut milk as the base fat, turmeric and ginger as the aromatic backbone, mustard seeds and curry leaves in the opening bloom, and a generous squeeze of lime at the very end to cut through the richness and lift everything. It is a soup that rewards the full technique: the bloom matters, the order of addition matters, and the lime at the end is not a garnish — it is the ingredient that makes the dish. From a nutritional standpoint, this bowl delivers on every level. Red lentils are an excellent source of plant-based protein and fibre — a single batch (serving 4) provides roughly 12–13g of protein and 5–6g of fibre per portion. Turmeric and ginger contain compounds that have been studied for their anti-inflammatory properties, and the coconut fat helps carry the fat-soluble compounds in the spices — exactly the delivery mechanism covered in Lesson A. Coconut milk also provides medium-chain triglycerides (MCTs), which are metabolised differently from many other dietary fats. Ingredients For the Soup 1 cup (200g) red lentils (masoor dal), rinsed well 1 x 400ml can full-fat coconut milk 600ml water or light vegetable stock 1 medium yellow onion, finely diced 4 garlic cloves, finely grated or minced 1 thumb (3cm) fresh ginger, finely grated 2 medium tomatoes, roughly chopped (or 200g canned chopped tomatoes) 1 tsp ground turmeric 1 tsp ground cumin ½ tsp ground coriander ¼ tsp cayenne or dried chili flakes (adjust to taste) ¾ tsp fine sea salt, plus more to taste Juice of 1 lime, plus wedges to serve For the Bloom (Tadka) 2 tbsp coconut oil or neutral oil 1 tsp black mustard seeds 1 tsp whole cumin seeds 10–12 fresh or frozen curry leaves (dried are a poor substitute — omit if unavailable) 2 dried red chilies (optional) Pinch of asafoetida (hing) — optional but recommended To Finish & Serve Fresh coriander (cilantro), roughly torn Lime wedges Warm flatbread, roti, or steamed rice alongside A swirl of coconut cream (optional, for richness) Method 1. Build the Bloom Heat the coconut oil in a large, heavy-bottomed saucepan or Dutch oven over medium-high heat. When the oil shimmers, add the mustard seeds. They will begin to pop within 20–30 seconds — stand back slightly and wait for the popping to subside. Add the cumin seeds and stir for 10 seconds. Add the curry leaves (they will spatter — this is normal), dried chilies if using, and the pinch of asafoetida. Stir once. The whole bloom should take no more than 60 seconds from the moment the mustard seeds go in. Move quickly. 2. Build the Aromatics Reduce the heat to medium. Add the diced onion to the bloomed spices and stir to coat in the fragrant oil. Cook for 8–10 minutes, stirring occasionally, until the onion is soft, translucent, and just beginning to colour at the edges. Do not rush this step — a properly softened onion is the flavour foundation of the soup. Add the garlic and ginger. Stir and cook for 2 minutes until fragrant. Add the ground turmeric, cumin, coriander, and cayenne. Stir for 30 seconds — the spices will coat the onion and the kitchen will smell extraordinary. Add the chopped tomatoes and cook for 4–5 minutes, stirring occasionally, until they break down and the mixture tightens into a rough paste. This is a simplified version of the bhunao step — cooking the tomato into the spice base until the oil begins to separate at the edges. It concentrates the flavour and removes the raw tomato taste. 3. Add the Lentils and Liquid Add the rinsed red lentils and stir to coat in the spiced tomato base. Pour in the coconut milk and water or stock. Stir well to combine. Bring to a boil over medium-high heat, then reduce to a steady simmer. Cook uncovered for 20–25 minutes, stirring every 5 minutes or so, until the lentils have completely collapsed and the soup has thickened to a creamy, porridge-like consistency. If it thickens too much, add a splash of water and stir through. Add the salt near the end of cooking for easier seasoning control. 4. Finish with Lime and Serve Remove from heat. Squeeze in the juice of one lime and stir through. Taste — the lime should brighten and lift the entire soup. If it still tastes flat, add more lime juice a little at a time. Adjust salt. The soup should be thick, creamy, warmly spiced, and bright at the finish. Ladle into wide bowls. Finish with torn coriander, a swirl of coconut cream if using, and a lime wedge alongside. Serve with warm flatbread or roti for scooping, or over steamed rice for a more substantial meal. Notes & Variations The lime is not optional. This is the most important note in the recipe. Red lentil and coconut soups can taste rich and one-dimensional without acid. The lime juice at the end is what separates a good soup from a great one. Start with one lime and taste — you may want more. Curry leaf sourcing: Fresh or frozen curry leaves are worth seeking out at South Asian grocery stores. They freeze beautifully and can be added directly from frozen to hot oil. Dried curry leaves have very little flavour — if you cannot find fresh or frozen, simply omit them and increase the cumin seeds slightly. Coconut milk — full fat matters: Light coconut milk will produce a thinner, less rich soup. Full-fat is the correct choice here. The fat gives the soup its characteristic silky body and helps carry the fat-soluble compounds in the spices. Spinach or greens addition: Stir 2 large handfuls of baby spinach or roughly chopped kale into the finished soup off the heat. The residual warmth will wilt the greens in 2–3 minutes without overcooking them. This adds iron, folate, and visual contrast. Protein boost: Stir in a 400g can of drained chickpeas with the lentils for additional protein and texture. The chickpeas stay whole while the lentils collapse around them — a pleasing contrast. Blended version: For a completely smooth soup, use a stick blender to partially or fully blend after cooking. The result is more elegant and restaurant-style — excellent for a dinner party. Finish with a swirl of coconut cream and a scattering of crispy curry leaves fried in a little oil. Storage: This soup keeps in the fridge for up to 4 days and freezes beautifully for up to 3 months. It thickens significantly as it cools — reheat with a splash of water or stock and stir well to restore the consistency. The flavours deepen overnight.
