Slow Cooker Apple Butter | The Grounded Kitchen

Apple butter is one of those old-fashioned kitchen preparations that rewards patience. Apples are slowly cooked with warm spices until much of their water evaporates and the fruit becomes deeply concentrated, smooth and spreadable.Despite its name, apple butter contains no butter. The word refers to its rich, buttery texture. This version is made in the slow cooker, where the apples gradually soften and reduce without requiring constant attention. The result is intensely apple-flavoured, gently spiced and useful far beyond the breakfast table.Spread it on toast, stir it into oatmeal, spoon it over pancakes or waffles, or use it wherever you want a concentrated hit of apple flavour. It also makes an excellent base for an Apple Butter Latte, giving a homemade version of the seasonal coffee-shop drink we love in the fall.Recipe Details Prep time: 20 minutes Cook time: Approximately 8–10 hours on Low, with additional reducing time if needed Yield: Approximately 2½–3 cups (625–750 mL), depending on reduction Difficulty: Easy Equipment: 5–6 qt (4.7–5.7 L) slow cooker and an immersion blender or potato masher Ingredients 3 lb (1.4 kg) apples, about 6–8 medium apples ½ cup (125 mL) apple cider or apple juice ⅓ cup (80 mL) pure maple syrup or ⅓ cup packed brown sugar 1 tbsp (15 mL) lemon juice 1½ tsp ground cinnamon ¼ tsp ground nutmeg ¼ tsp ground allspice ⅛ tsp ground cloves ¼ tsp salt 1 tsp (5 mL) vanilla extract Instructions1. Prepare the ApplesWash the apples. Peel them if you want an especially smooth apple butter. Leaving the skins on is also fine, particularly if using a high-powered blender later.Core the apples and cut them into roughly 1-inch (2.5 cm) pieces. There is no need to make the pieces perfectly uniform because they will eventually break down during cooking.2. Begin the Slow CookPlace the apples in a 5–6 qt (4.7–5.7 L) slow cooker. Add the apple cider, maple syrup or brown sugar, lemon juice, cinnamon, nutmeg, allspice, cloves and salt. Stir well to coat the apples.Cover and cook on Low for 6–7 hours, stirring once or twice if convenient. The apples should be completely soft and beginning to break down.3. Cook It DownRemove the lid and continue cooking on Low for another 2–3 hours, stirring occasionally and scraping the edges to prevent sticking. The uncovered stage allows excess moisture to escape so the apple mixture can concentrate and develop the thick, spreadable texture that distinguishes apple butter from applesauce. The finished apple butter should be thick enough that a spoonful holds its shape rather than quickly running across the surface. Slow cookers and apples vary, so allow additional time if needed. If your slow cooker reduces very slowly, transfer the softened mixture to a wide, heavy-bottomed saucepan and simmer gently, stirring frequently, until thick.4. Blend Until SmoothTurn off the slow cooker and stir in the vanilla. For smooth apple butter, use an immersion blender with the blade fully submerged, taking care to avoid splashes.Alternatively, let the mixture cool slightly and blend in small batches in a blender suitable for hot food, following its instructions for venting steam. Never blend hot apple butter in a sealed personal blender. If you prefer a more rustic texture, mash thoroughly with a potato masher. If the apple butter is still too loose after blending, return it to gentle heat and continue cooking uncovered, stirring regularly, until spreadable.Grounded Kitchen SecretThe lid comes off for the final stage. It’s tempting to leave the slow cooker covered for the entire cooking time, but that traps the moisture you’re trying to remove. The first stage softens the apples and develops the flavour. The uncovered stage concentrates everything. Judge the finish by texture rather than the clock, and remember that apple butter thickens a little more as it cools.Choosing ApplesA mixture of sweet and tart apples gives the best flavour. Good choices include Honeycrisp, Cortland, McIntosh, Empire, Granny Smith or Golden Delicious. You don’t need a particular variety, and this is an excellent recipe for using a mixture of apples already in the kitchen.Very sweet apples may require less maple syrup or brown sugar, while particularly tart apples may benefit from a little more. Taste toward the end of cooking before adjusting the sweetness.Variations & SubstitutionsMaple or brown sugar: Maple syrup gives a distinctly Canadian flavour, while brown sugar brings a gentle molasses note. Use either in the amount listed.Skins on or off: Peel for the smoothest finish, or leave the skins on and blend thoroughly for a more rustic approach.Adjust the spice: For a gentler flavour, reduce the cloves or omit them. Keep the cinnamon as the main warm-spice note. How to Use Apple ButterApple butter is much more versatile than a simple toast spread. Try it on toast or English muffins, swirl it into oatmeal, spoon it over pancakes or waffles, or serve it alongside pork or roasted chicken. It can also be incorporated into baked goods, sauces and desserts wherever a concentrated apple flavour would be useful. For a fall drink, use it to make an Apple Butter Latte with espresso or strong coffee, steamed milk and a spoonful of homemade apple butter. As we build the Grounded Kitchen recipe collection, we’ll add links here to more recipes that make good use of homemade apple butter.Make-Ahead & StorageTransfer the apple butter to clean, heat-safe containers and refrigerate promptly, within 2 hours of finishing. Store covered in the refrigerator for up to 2 weeks, using a clean spoon each time. For longer storage, freeze in small freezer-safe containers for up to 3 months. Leave some space at the top of each container for expansion. Thaw overnight in the refrigerator and stir well before using. This recipe is intended for refrigerator or freezer storage, not room-temperature storage. For shelf-stable jars, use a tested canning recipe and its specified processing method.Apple Butter vs. ApplesauceThe two begin in much the same way, but they’re finished differently. Applesauce retains considerably more moisture and has a lighter, looser texture. Apple butter is cooked much longer, allowing water to evaporate and the natural sugars in the apples to concentrate. That’s what gives apple butter its darker colour, richer flavour and thick, spreadable consistency.
