Rich Turkey Gravy from Drippings | Grounded Kitchen Thanksgiving

A Thanksgiving turkey can be beautifully roasted, but it is the gravy that brings the whole plate together. This rich turkey gravy begins with the browned drippings left behind after roasting the turkey. Those concentrated juices are combined with a simple roux, good-quality turkey or chicken stock, and just enough seasoning to create a smooth, deeply savoury gravy that is made for spooning generously over turkey, mashed potatoes and stuffing. The secret isn't complicated. Use the drippings, build the roux carefully, add the stock gradually, and taste before serving. And don't worry if your gravy isn't perfectly smooth. A little roasted onion, herb or browned pan flavour is evidence that it came from a real Thanksgiving kitchen. Ingredients 4 cups turkey or chicken stock, preferably low-sodium ½ cup turkey pan drippings, fat separated from the juices ¼ cup unsalted butter, if needed ¼ cup all-purpose flour ½ teaspoon kosher salt, plus more to taste ½ teaspoon freshly ground black pepper 1 teaspoon fresh thyme leaves 1 teaspoon fresh sage, finely chopped 1–2 teaspoons Worcestershire sauce, optional 1 teaspoon pure maple syrup, optional 1–2 tablespoons cold butter, for finishing Method 1. Reserve the Turkey Drippings Once the turkey has been removed from the roasting pan, carefully pour the pan drippings through a fine-mesh strainer into a large measuring cup or bowl. Allow the mixture to stand for a few minutes. The fat will rise to the surface while the darker roasting juices settle underneath. Skim off the fat and reserve it separately. You want approximately ½ cup of fat and roasting juices combined for the gravy. If you don't have enough turkey fat, supplement it with unsalted butter. Don't discard the dark juices — they contain some of the most concentrated flavour from the entire meal. 2. Warm the Stock Pour the stock into a saucepan and warm it over low heat. It doesn't need to boil — just keep it hot. Warm stock combines more easily with the roux and helps the gravy come together smoothly. 3. Make the Roux Place the reserved turkey fat in a large saucepan over medium heat. If you don't have enough fat, add unsalted butter to bring the total amount of fat to ¼ cup. Whisk in the flour. Cook for 2–3 minutes, whisking constantly, until the flour loses its raw smell and the mixture becomes lightly golden. Don't rush this step — a little cooking develops flavour and removes the raw flour taste. 4. Add the Stock Begin adding the warm stock gradually, whisking constantly. Start with a small amount and whisk until completely smooth before adding more. Continue until all of the stock has been incorporated. The gravy will initially look thin — don't add more flour. Bring it to a gentle simmer and cook for 5–8 minutes, whisking occasionally, until it thickens enough to coat the back of a spoon. 5. Add the Turkey Drippings Whisk the reserved roasting juices into the gravy. Add the thyme and sage. If desired, add the Worcestershire sauce and maple syrup. The Worcestershire sauce adds depth without making the gravy taste distinctly of Worcestershire, while the small amount of maple echoes the maple-herb butter used on the turkey. Neither is essential. 6. Taste and Adjust Taste the gravy before adding additional salt. Turkey drippings and stock can vary considerably in saltiness. Adjust with more salt if it tastes flat, more pepper for warmth, a splash of stock if it becomes too thick, a little extra Worcestershire for savoury depth, or a tiny amount of maple syrup if you want to reinforce the flavour of the turkey. The goal is a rich, savoury gravy — not a sweet one. 7. Finish With Butter Remove the gravy from the heat. Whisk in 1–2 tablespoons of cold butter until completely melted and incorporated. This gives the finished gravy a glossy texture and rounds out the flavour. If you prefer an exceptionally smooth gravy, strain it once more through a fine-mesh sieve before serving. 8. Serve Transfer the gravy to a warmed gravy boat or serving jug. Serve immediately alongside the turkey, mashed potatoes and stuffing. Grounded Kitchen Secrets The pan drippings are the flavour. Don't treat them as an optional extra. The browned bits, roasting juices and turkey fat give homemade gravy a depth that stock alone can't reproduce. Separate the fat from the juices. The fat becomes part of the roux, while the concentrated roasting juices are added later for flavour. Add stock gradually. Dumping it all into the roux at once makes lumps much more likely. A slow addition with constant whisking gives you a smooth gravy. Don't make it too thick. Gravy thickens further as it sits. It should pour easily from the gravy boat rather than sit like a sauce on the spoon. Taste at the end. The amount of salt you'll need depends on the turkey drippings and stock. Always taste before seasoning. Keep a little extra stock nearby. If the gravy becomes too thick while waiting for dinner, whisk in a splash of warm stock to bring it back to the right consistency. What If I Don't Have Enough Pan Drippings? That's completely fine. Use whatever turkey drippings you have and supplement the fat with unsalted butter. If there isn't enough roasting liquid, use additional turkey or chicken stock. For even more turkey flavour, simmer the neck and giblets with stock while the turkey roasts, then strain and use that enriched stock in the gravy. How to Fix Common Gravy Problems Gravy Is Too Thin Let it simmer uncovered for several additional minutes. If it still needs thickening, mix 1 tablespoon cornstarch with 2 tablespoons cold water and whisk a small amount into the simmering gravy. Gravy Is Too Thick Whisk in warm turkey or chicken stock a little at a time until it reaches the consistency you want. Gravy Is Lumpy Pass it through a fine-mesh sieve. If necessary, use an immersion blender briefly to smooth it before straining. Gravy Is Too Salty Dilute with unsalted stock and, if necessary, make a small amount of additional unsalted roux to increase the volume. A tiny splash of cream can also soften the perception of salt. Gravy Tastes Flat Taste first, then adjust the salt. A small amount of Worcestershire sauce can add savoury depth, while a teaspoon of pan juices can bring back some of the roasted turkey character. Make-Ahead Tip Gravy can be made 1–2 days ahead using turkey stock and a small amount of reserved turkey fat or butter. Cool it promptly, cover and refrigerate. On Thanksgiving Day, gently reheat over low heat, whisking occasionally. Add a little warm stock if necessary to restore the consistency. Once the turkey is roasted, add the reserved pan drippings to the reheated gravy for the freshest flavour. Keeping Gravy Warm If the gravy is finished before everyone is ready to eat, keep it warm over very low heat, stirring occasionally. Do not let it boil for an extended period. If it thickens while waiting, whisk in a little warm stock.
