Both are designed to pair with the Easy Quiche Base and its variations. The blind-bake protocol at the end applies to both. 1. Classic All-Butter Flaky Crust The gold standard for savoury tarts. The cold-fat technique creates distinct layers of steam during baking, resulting in a shatteringly crisp finish. Prep time: 15 minutes + 1 hour chill Ingredients 1¼ cups (155g) all-purpose flour ½ tsp fine sea salt ½ cup (1 stick / 113g) unsalted butter, very cold (ideally fridge-cold), cut into ½-inch (1–1.5 cm) cubes 3–5 tbsp ice water Instructions Cut the fat. Combine flour and salt in a large bowl. Add the cold butter cubes. Using a pastry cutter or two forks, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining. Those irregular pieces create flaky layers — do not overwork. Hydrate. Add ice water one tablespoon at a time, tossing with a fork after each addition, until the dough just holds together when pressed. It should not be sticky or wet. For best structural results, use a 50/50 blend of spelt and all-purpose flour — spelt alone can produce a fragile crust that is difficult to transfer. Prep time: 10 minutes (+ optional 10–15 minute rest) Ingredients ¾ cup spelt flour (light or whole) ¾ cup all-purpose flour ½ tsp fine sea salt ⅓ cup extra-virgin olive oil, cold 3–4 tbsp ice-cold water or unsweetened plant-based milk Instructions Whisk dry ingredients. Mix the spelt flour, all-purpose flour, and salt in a medium bowl. Emulsify. Pour the cold olive oil into the flour mixture. Mix with a fork until the flour is evenly coated and the texture resembles wet sand. Bind. Add the cold water or plant-based milk one tablespoon at a time, mixing until the dough comes together into a soft, cohesive mass (it won’t be elastic or smooth like a butter dough). Spelt contains less elastic gluten than modern wheat — handle gently and stop mixing as soon as the dough holds. Optional rest. Rest the dough for 10–15 minutes before rolling. This allows the flour to fully hydrate and makes handling easier, reducing cracking at the edges. Press or roll. This dough can be rolled between two sheets of parchment paper, or pressed directly into the pie tin for a more rustic, shortbread-style finish. Either method works well for quiche. The Blind-Bake Protocol Blind-baking is essential for quiche regardless of which crust you use. The custard filling contains significant moisture, and an unbaked crust will absorb it before it has a chance to set — resulting in a soggy base. The seal step below is the key to a truly waterproof barrier. Before you begin: Place a rimmed baking sheet on the centre rack while the oven preheats to 190°C (375°F). Baking the quiche on a hot tray mimics a pizza stone effect and promotes a crisper bottom crust. Line. Place a sheet of parchment paper over the raw crust, pressing it into the edges. Fill with ceramic pie weights or dried beans, ensuring they reach the sides to prevent slumping. Initial bake. Bake at 190°C (375°F) for 12–15 minutes. The crust is ready to move on when the edges are light golden and the base looks dry and matte — not shiny or raw. Seal. Remove the weights and parchment.
