Moroccan Chickpea & Turmeric Stew | The Grounded Kitchen

By the time the chickpeas and coconut milk go in, the functional work is already done. What follows is simply good cooking. The flavour is deeply savoury, warmly spiced, and rounded by the coconut milk into something that feels more like a slow-cooked Sunday dish than a weeknight stew. It is both. The Findings: Why it Works The Bloom: Turmeric, cumin, coriander, paprika, cinnamon, and black pepper bloomed in olive oil at the start — this single step releases more fat-soluble aromatic compounds than an hour of simmering in liquid could achieve. Ingredients 3 tbsp olive oil 1 large onion, finely diced 4 cloves garlic, minced 1 tbsp fresh ginger, grated 2 tsp ground turmeric 1 tsp ground cumin 1 tsp ground coriander 1 tsp smoked paprika 1/2 tsp ground cinnamon 1/2 tsp freshly ground black pepper 1/4 tsp cayenne (optional) 2 cans (400g each) chickpeas, drained and rinsed 1 can (400g) crushed tomatoes 400ml vegetable stock 1 can (400ml) full-fat coconut milk 1 preserved lemon, rind only, finely chopped (or 2 tbsp fresh lemon juice) Large handful of fresh spinach or kale Sea salt to taste To serve: Fresh coriander, a drizzle of olive oil, warm flatbread or cooked sorghum. The Process 1. The Bloom Warm the olive oil in a large heavy-bottomed pot over medium heat. Add the turmeric, cumin, coriander, paprika, cinnamon, black pepper, and cayenne. Stir constantly for 45–60 seconds until deeply fragrant. This is the most important step in the recipe — do not rush it. 2. The Base Add the diced onion to the spiced oil and cook over medium-low heat for 10–12 minutes, stirring occasionally, until soft and golden. Add the garlic and ginger and cook for a further 2–3 minutes until fragrant. 3. The Tomatoes Stir in the crushed tomatoes and cook for 5 minutes until the mixture thickens slightly and the oil begins to separate from the tomatoes at the edges. This is the sign that the base is ready. 4. The Chickpeas and Liquids Add the chickpeas, vegetable stock, and coconut milk. Stir to combine and bring to a gentle simmer. 5. The Simmer Cook uncovered over low heat for 15–20 minutes, stirring occasionally, until the stew thickens to your preference. The coconut milk will reduce and deepen in flavour. 6. The Finish Stir in the preserved lemon and the spinach or kale. Cook for 2–3 minutes until the greens are just wilted. Taste and adjust seasoning. Serve in deep bowls with fresh coriander, a drizzle of olive oil, and warm flatbread or sorghum alongside. Explorer's Tips The Preserved Lemon: Worth seeking out — it adds a depth that fresh lemon cannot replicate. Find it at Middle Eastern grocers or make your own (a simple 4-week salt cure). If unavailable, use fresh lemon juice and a pinch of sea salt, but the flavour will be different. Coconut Milk: Full-fat is important here, both for flavour and for curcumin absorption. Light coconut milk produces a thinner, less rounded result. The Next Day: Like most spiced stews, this improves overnight as the flavours deepen. Make a double batch and refrigerate for up to 4 days, or freeze in portions for up to 3 months.
