Miso-Glazed Lentil Patties | The Grounded Kitchen Members' Recipes

A foundational recipe from Module 05: The Pulse of Life. These patties bring together two of the most studied gut-health foods in a single dish: green lentils, with their prebiotic fibre and plant protein, and fermented miso, traditionally associated with digestive health. The glaze is applied at the very end — a thin, caramelised lacquer that adds complexity without overpowering the lentil. Serve with a quick cucumber salad and a tahini drizzle for a complete meal. Why This Recipe Lentil patties have a reputation problem. Too often they are dense, crumbly, and flavourless — a well-intentioned but joyless substitute for something else. These are not those patties. The technique here produces a patty with a genuinely firm, cohesive interior and a properly golden, slightly crisped exterior — one that holds together on a fork and has enough flavour to stand on its own. The key is in the preparation: green lentils cooked until just tender (not soft), the onion softened separately before mixing to remove excess moisture and deepen the flavour base, and the mixture chilled before shaping so the patties hold their form in the pan. The miso glaze is applied in the final minute of cooking — it caramelises quickly in the hot pan, creating a thin, lacquered finish with a deep, savoury-sweet complexity that lifts the whole dish. From a nutritional standpoint, this recipe combines two fermented and prebiotic food traditions. Green lentils provide prebiotic fibre that feeds beneficial gut bacteria. Miso — fermented soybean paste — contains live cultures (in unpasteurised versions) and a broad spectrum of amino acids, B vitamins, and minerals. Together they represent a genuinely functional pairing, grounded in both Japanese fermentation tradition and the Eastern legume wisdom at the heart of Module 5. Ingredients For the Patties 1 cup (200g) green or brown lentils, soaked 4–8 hours and drained 1 small yellow onion, very finely diced 3 garlic cloves, finely grated 1 tsp ground cumin ½ tsp smoked paprika ¼ tsp ground coriander ¼ tsp freshly ground black pepper 2 tbsp aquafaba (chickpea liquid) or 1 small egg, lightly beaten 3 tbsp rolled oats (certified gluten-free if needed), blitzed to a rough flour ½ tsp fine sea salt 2 tbsp neutral oil, for pan-frying (plus a splash for the onion) For the Miso Glaze 2 tbsp white (shiro) miso paste 1 tbsp rice wine vinegar 1 tbsp maple syrup or honey 1 tsp toasted sesame oil 1 tsp tamari or soy sauce 1 tsp warm water, to loosen For the Cucumber Salad 1 large cucumber, thinly sliced or ribboned with a peeler 1 tbsp rice wine vinegar 1 tsp toasted sesame oil 1 tsp tamari 1 tsp sesame seeds Pinch of chili flakes (optional) To Serve Tahini drizzle: 2 tbsp tahini thinned with lemon juice and water until pourable Fresh coriander or flat-leaf parsley Steamed rice, grain bowl base, or flatbread alongside Method 1. Cook the Lentils Drain and rinse the soaked lentils. Place in a saucepan with 2¼ cups (560ml) of cold water, a bay leaf, and a halved garlic clove. Bring to a boil, then reduce to a gentle simmer. Cook for 18–22 minutes — until the lentils are tender all the way through but still holding their shape firmly. You want them cooked, not collapsing. Drain well and spread on a tray or wide plate to cool and steam-dry for 10 minutes. Excess moisture is the enemy of a patty that holds together. 2. Soften the Onion While the lentils cool, heat a splash of oil in a small frying pan over medium heat. Add the finely diced onion and cook for 3–4 minutes, stirring occasionally, until soft, translucent, and just beginning to colour. This step removes the excess moisture from the raw onion — which would otherwise create steam pockets inside the patty and risk cracking — and deepens the umami base of the mixture. Set aside to cool slightly. 3. Make the Patty Mixture Transfer the cooled lentils to a large bowl. Using a fork or potato masher, mash roughly two-thirds of the lentils — you want a cohesive paste with visible whole lentils throughout. Do not over-mash into a smooth purée; the texture contrast is what gives the patty its character. Add the softened onion, grated garlic, cumin, smoked paprika, coriander, black pepper, salt, aquafaba or egg, and blitzed oats. Mix well with a fork until everything is evenly combined. The mixture is ready when it holds together when pressed and cleans the sides of the bowl without sticking heavily to your hands. If it feels too wet, add another tablespoon of oat flour and mix again. If too dry, add a splash more aquafaba. Cover and refrigerate for at least 30 minutes, or up to overnight. This chilling step is not optional — it allows the oats to absorb moisture and the mixture to firm up, which is what makes the patties hold their shape in the pan. 4. Make the Miso Glaze Whisk together the miso paste, rice wine vinegar, maple syrup, sesame oil, tamari, and warm water until smooth. The glaze should be thick but pourable — about the consistency of a thin honey. Set aside. Do not add it to the pan until the very end — miso burns quickly and will turn bitter if cooked for too long. 5. Prepare the Cucumber Salad Slice the cucumber and set aside. Toss with the dressing — rice wine vinegar, sesame oil, tamari, sesame seeds, and chili flakes — just before you begin pan-frying the patties. The tamari and vinegar will draw moisture from the cucumber quickly; dressing it too early will result in a watery salad that dilutes the dressing. Toss at the last moment and serve promptly. 6. Shape and Pan-Fry Divide the chilled mixture into 8 equal portions (for smaller patties) or 6 (for larger ones). Shape each into a firm disc about 1.5cm thick — press firmly so the patty is compact and even. Loose, thick patties fall apart; firm, flat ones hold together and brown evenly. Heat the neutral oil in a wide, heavy-bottomed frying pan — cast iron or stainless steel — over medium heat. When the oil shimmers, add the patties in a single layer without crowding. Cook undisturbed for 4–5 minutes until a deep golden crust has formed on the underside. Resist the urge to move them — the crust is what holds the patty together. Flip carefully with a thin spatula and cook for another 3–4 minutes on the second side. 7. Apply the Miso Glaze In the final 60 seconds of cooking, spoon or brush a thin layer of miso glaze over the top of each patty. The glaze will sizzle and caramelise in the heat of the pan — watch it carefully, as miso burns quickly. Flip once more for 15–20 seconds to set the glaze on the underside, then remove from the pan immediately. 8. Assemble and Serve Arrange the patties on plates or a sharing platter. Spoon the cucumber salad alongside. Drizzle the thinned tahini over the patties and scatter with fresh coriander or parsley. Serve immediately — the glaze is at its best when warm and just set. Notes & Variations The chilling step is non-negotiable. Skipping it is the most common reason lentil patties fall apart in the pan. 30 minutes minimum; overnight is better. Cold patties hold their shape; room-temperature ones do not. On miso selection: White (shiro) miso is the mildest and sweetest — the right choice for a glaze where you want complexity without bitterness. Red miso is more intense and fermented longer; it works but will produce a stronger, saltier glaze. Reduce the tamari if using red miso. Live cultures note: Miso contains live cultures in its unpasteurised form, which are destroyed by high heat. The glaze is applied at the very end of cooking to preserve as much of this as possible, but some heat exposure is unavoidable. If preserving live cultures is a priority, serve a small amount of unheated miso alongside — thinned with water as a dipping sauce. Aquafaba vs. egg: Aquafaba works well here as a binder and keeps the recipe fully plant-based. A beaten egg produces a slightly firmer patty with a more cohesive crumb. Both are valid — use whichever suits your preference and dietary needs. Gluten-free version: Use certified gluten-free oats and tamari rather than soy sauce. All other ingredients are naturally gluten-free. Make-ahead: The uncooked patty mixture keeps in the fridge for up to 2 days. Shaped, uncooked patties can be frozen on a tray and transferred to a bag — cook from frozen over medium-low heat with a lid on for the first 5 minutes. Cooked patties reheat well in a dry pan or oven (180°C, 8–10 minutes). Serving variations: These patties work well in a grain bowl with brown rice, pickled vegetables, and edamame. They also make an excellent burger — serve in a toasted bun with the cucumber salad, tahini, and a few leaves of butter lettuce.
