Mango Coconut Lime Popsicles with Tajín

Ripe mango and full-fat coconut milk come together in a silky, tropical base, brightened with fresh lime juice and zest. The optional Tajín rim adds a chilli-lime kick that makes these feel like something you'd find at a beachside paleta cart. They're naturally sweetened, completely dairy-free, and require zero cooking.Best of all: they take about 10 minutes to prep and the freezer does the rest.Ingredients 3 cups ripe mango, fresh or frozen (about 2 large mangoes) 1 can (400 ml) full-fat coconut milk 3 tablespoons fresh lime juice (about 2 limes) 1 teaspoon lime zest 2–3 tablespoons maple syrup or honey, to taste Pinch of fine sea salt Optional rim: Tajín seasoning + lime wedge Instructions Blend. Add the mango, coconut milk, lime juice, lime zest, maple syrup, and salt to a blender. Blend on high until completely smooth, about 60 seconds. Taste and adjust sweetness. Pour. Pour the mixture into popsicle moulds, leaving about 1 cm of space at the top for expansion. Tap the moulds gently on the counter to release any air bubbles. Insert sticks. Place popsicle sticks into each mould. If your mould doesn't have a lid to hold them in place, freeze for 30 minutes first until the mixture is slushy, then insert the sticks. Freeze. Freeze for a minimum of 6 hours, or overnight, until completely solid. Unmould. Run warm water over the outside of the mould for 20–30 seconds to release. Pull gently on the stick. Optional Tajín rim. Rub a lime wedge around the edge of each popsicle, then dip or sprinkle with Tajín for a chilli-lime finish. Tips & Variations Mango variety matters. Ataulfo (honey) mangoes are the sweetest and creamiest — ideal here. Frozen mango works beautifully and is often more consistent in flavour year-round. Swirl option. Reserve ¼ cup of coconut milk, sweeten lightly, and swirl it into the moulds before freezing for a marbled look. Add heat. Blend in a small slice of fresh jalapeño for a spicy mango paleta variation. Coconut lite. Full-fat coconut milk gives the creamiest result. Light coconut milk will produce a slightly icier texture — still delicious, just less rich. Storage. Once unmoulded, wrap individually in parchment and store in a zip-lock bag in the freezer for up to 3 weeks.
