Lemon Herb Roast Chicken with Crispy Potatoes

Roasting the chicken directly on a bed of baby potatoes creates a complete one-pan meal where the potatoes soak up all the flavorful drippings while turning golden and crispy. Even better, you'll use half the chicken for tonight's dinner and save the rest for quick, delicious meals throughout the week. Ingredients 1 whole chicken (4-5 lb) 2 lb baby potatoes, halved 4 cloves garlic, smashed 3 tbsp olive oil 2 lemons (1 halved, 1 juiced) 2 tbsp fresh parsley, chopped 1 tbsp fresh dill, chopped 1 tbsp dried oregano Salt and pepper to taste Instructions Preheat oven to 425°F. Pat chicken completely dry with paper towels. In a small bowl, mix olive oil, lemon juice, oregano, parsley, dill, salt, and pepper to create herb paste. Rub herb mixture all over chicken, including under the skin where possible. Stuff cavity with lemon halves and smashed garlic. Arrange halved potatoes in a large roasting pan. Place chicken on top of potatoes, breast-side up. Roast for 60-75 minutes until skin is golden and internal temperature reaches 165°F in the thickest part of the thigh. Potatoes should be crispy and golden. Let chicken rest for 10 minutes. Serve half the chicken tonight with crispy potatoes. Remove remaining meat from bones, shred, and refrigerate in an airtight container. Portion Strategy Serve legs and one breast tonight.
