Homemade Marzipan Recipe | Easy 10-Minute Almond Paste

Marzipan has a reputation for being a specialty ingredient — something you buy in a block and use once a year. That reputation is undeserved. Made from scratch, it takes ten minutes, three ingredients, and no cooking. The result is smoother, less sweet, and far more versatile than anything from a packet. Once you know how to make it, you’ll find reasons to use it constantly. The Findings: Why it Works Ground almonds vs. almond flour — ground almonds (with their skins) give a slightly coarser, more rustic paste with deeper flavour. Blanched almond flour produces a smoother, paler marzipan closer to the commercial style. Both work; the choice depends on intended use. Two sugars, one purpose — combining icing sugar (for smoothness and binding) with caster sugar (for structure and a subtle crystalline texture) gives a more complex result than either alone. All icing sugar produces a paste that’s too soft; all caster sugar makes it grainy. Egg white as the binder — raw egg white binds without adding fat or flavour, keeping the almond taste clean and forward. For a no-egg version, a small amount of glucose syrup or light corn syrup works well and extends shelf life. Kneading matters — a brief knead (2–3 minutes) develops the oils in the almonds and produces a pliable, non-sticky paste. Under-kneaded marzipan cracks when rolled; over-kneaded marzipan becomes oily. Flavour is a dial, not a fixed point — rose water, orange blossom, citrus zest, and vanilla all work. Add in small increments — almond paste amplifies flavour quickly. Ingredients Makes approx. 400g — enough to fill and top one 20cm (8-inch) cake, or to make a generous batch of marzipan fruits or chocolates. 200g ground almonds (or blanched almond flour for a smoother result) 100g icing sugar, sifted 100g caster sugar 1 large egg white (or 2 tbsp glucose syrup for egg-free) ½ tsp almond extract (optional — intensifies the almond flavour) 1 tsp rose water or orange blossom water (optional) Method Combine the dry ingredients. Whisk together the ground almonds, icing sugar, and caster sugar in a large bowl until evenly mixed with no lumps. Add the binder. Make a well in the centre and add the egg white (and any flavourings). Mix with a fork until the mixture begins to clump, then bring together with your hands. Knead. Turn out onto a clean surface lightly dusted with icing sugar. Knead for 2–3 minutes until smooth, pliable, and no longer sticky. It should feel like soft modelling clay — firm enough to hold a shape, supple enough to roll without cracking. Rest and store. Wrap tightly in cling film and rest for at least 30 minutes before using. This allows the sugars to fully hydrate and the paste to firm slightly. Store in the fridge for up to 2 weeks, or freeze for up to 3 months. Variations Rose marzipan — replace almond extract with 1½ tsp rose water. Pair with pistachio or raspberry. Citrus marzipan — add the finely grated zest of 1 orange or lemon. Excellent as a cake filling or rolled into truffles. Dark chocolate-dipped marzipan — roll into logs or small rounds, chill for 20 minutes, then dip in tempered dark chocolate. Set on baking parchment. A classic confection that keeps for 2 weeks. Pistachio marzipan — replace half the ground almonds with finely ground pistachios. The colour is extraordinary; the flavour is more complex and less sweet. Vegan marzipan — use 2 tbsp glucose syrup or light corn syrup in place of egg white. Slightly softer but fully functional for rolling and shaping. Explorer’s Tips Too dry? Add egg white or glucose syrup ½ tsp at a time until the paste comes together. Humidity and almond oil content vary batch to batch. Too sticky? Dust with a little more icing sugar and knead briefly. Avoid adding too much — it will make the paste stiff and prone to cracking. For cake covering: Roll between two sheets of baking parchment to an even 4–5mm (⅛ inch) thickness. Chill the rolled sheet for 10 minutes before draping — it handles much more cleanly. For marzipan fruits: Add a small amount of gel food colouring and shape by hand. A clove makes a perfect apple or orange stem. Almond extract caution: It’s potent. Start with ¼ tsp and taste before adding more — a little goes a long way.
