Asparagus & Gruyère Tart on a Spelt Crust Yields: 6–8 servings | Prep: 25 minutes + crust chill | Bake: 45–50 minutes total Asparagus has a short, brilliant season — typically spring through early summer — and this tart is designed to make the most of it. The spelt and all-purpose crust offers a nuttier, more textured base than a standard white flour pastry, complementing the grassy sweetness of the asparagus without competing with it. The Gruyère custard is intentionally restrained: enough richness to bind and flavour, light enough that the asparagus remains the centrepiece. This tart follows the same custard and blind-bake principles as the Easy Quiche Base, and the crust method is drawn directly from the Quiche Crust Guide. Ingredients Spelt Crust ¾ cup spelt flour (light or whole) ¾ cup all-purpose flour ½ tsp fine sea salt ⅓ cup extra-virgin olive oil, cold 3–4 tbsp ice-cold water Filling 1 bunch fresh asparagus (about 400g / 14 oz), woody ends trimmed 3 large eggs ¾ cup (180ml) heavy cream ¼ cup (60ml) whole milk 1 cup (100g) grated Gruyère ½ tsp fine sea salt ¼ tsp freshly ground black pepper ¼ tsp freshly grated nutmeg Zest of ½ lemon 1 tsp fresh thyme leaves 1 tsp olive oil or butter, for finishing the asparagus Instructions 1. Make the Spelt Crust Whisk the spelt flour, all-purpose flour, and salt in a medium bowl. Pour in the cold olive oil and mix with a fork until the texture resembles wet sand. Add ice-cold water one tablespoon at a time until the dough comes together into a soft, cohesive mass — it will not be elastic like a butter dough. Rest the dough for 10–15 minutes to hydrate the flour and reduce cracking. Press evenly into a 9-inch (23 cm) fluted tart tin with a removable base, working up the sides to an even thickness. Refrigerate for 15 minutes. 2. Blind-Bake the Crust Preheat the oven to 190°C (375°F) with a baking sheet on the centre rack. Line the crust with parchment and fill with pie weights. Bake for 12–15 minutes until the edges are set and lightly golden. Remove the weights and parchment. Immediately brush the base and sides with a thin layer of beaten egg (this creates a moisture barrier). Bake uncovered for a further 5–8 minutes until the base is dry, matte, and lightly golden. Set aside. 3. Prepare the Asparagus Bring a large pot of salted water to a boil. Blanch the asparagus for 2 minutes, then transfer immediately to an ice bath to halt cooking and preserve the colour. Pat thoroughly dry — surface moisture will dilute the custard. If the spears are thick, halve them lengthwise for a more elegant presentation and even baking. Toss lightly with olive oil or butter and a pinch of salt. 4. Make the Custard Whisk together the eggs, cream, milk, half the Gruyère, salt, pepper, nutmeg, lemon zest, and thyme leaves until fully combined. 5. Assemble and Bake Reduce the oven to 175°C (350°F). Scatter the remaining Gruyère across the base of the blind-baked crust. Pour the custard over evenly, filling to just below the rim. Arrange the asparagus spears across the top in a single layer, tips facing outward. Press them gently into the custard so they are partially submerged. Bake for 25–30 minutes, until the custard is just set with a slight jiggle at the centre. The asparagus tips should be lightly caramelised. Rest for at least 10 minutes before removing from the tin and slicing. Kitchen Notes Asparagus moisture: Thorough drying after blanching is essential. Any surface water will thin the custard and prevent a clean set. Pat with a clean kitchen towel and allow to air-dry for a few minutes if needed. Lemon zest: Do not skip this. A small amount of citrus zest cuts through the richness of the Gruyère and cream, brightening the overall flavour without making the tart taste citrusy. Asparagus thickness: Thin, pencil-width spears are ideal — they cook through in the baking time without becoming mushy. Thick spears benefit from halving lengthwise or a slightly longer blanch of 3 minutes. Make-ahead: The crust can be blind-baked up to 24 hours ahead. The assembled tart keeps well refrigerated for up to 2 days and can be served at room temperature or gently rewarmed at 160°C (325°F) for 10–12 minutes. Cheese variation: Comté is an excellent substitute for Gruyère and offers a slightly more floral, less sharp profile. A mild aged cheddar also works well for a more accessible flavour. Variations Wild Leek & Asparagus Replace half the asparagus with thinly sliced wild leek (ramp) bulbs, sautéed briefly in butter until softened. Wild leeks have a short spring season that overlaps with asparagus in many regions, making this a genuinely seasonal combination. Use the green tops as a garnish. All-Butter Crust Version For a richer, flakier base, substitute the spelt olive oil crust with the Classic All-Butter Flaky Crust from the Quiche Crust Guide. The butter crust pairs particularly well with the Gruyère custard for a more indulgent Easter centrepiece. Goat Cheese & Herb Variation Replace half the Gruyère with crumbled fresh goat cheese and add 1 tbsp of finely chopped fresh tarragon to the custard. Tarragon has a natural affinity with asparagus and gives the tart a distinctly French character.
