Aquafaba Chocolate Mousse | The Grounded Kitchen Members' Recipes

A foundational recipe from Module 05: The Pulse of Life, and the most immediate application of the aquafaba technique. This mousse is silky, deeply chocolatey, and genuinely impressive — made entirely without dairy or eggs. The aquafaba whips into a stable foam that folds into melted dark chocolate, setting in the fridge into something that shares many of the qualities of a classic French mousse. It is also, quietly, one of the most elegant expressions of zero-waste cooking you can put on a table. Why This Recipe The classic French chocolate mousse is built on whipped egg whites and melted chocolate — a simple combination that produces something far greater than the sum of its parts. The egg white foam traps air, the chocolate sets around it, and the result is a mousse that is simultaneously light and rich, airy and intense. Aquafaba performs a similar structural role. Its combination of proteins, starches, saponins, and soluble plant solids allows it to foam and hold air in a way that is functionally comparable to egg white. When folded into melted dark chocolate and chilled, the result is a mousse that shares many of the qualities of the classic — airy, silky, and intensely chocolatey — with a flavour that is clean and focused, without the richness of egg yolk to compete. This recipe is also the practical conclusion of the zero-waste philosophy that runs through the pulse pantry. The chickpea gives you the bean for hummus, chana masala, and spiced toppings. The cooking liquid gives you this. Nothing is discarded. Everything is used. Ingredients Serves 4 — in small portions, this is rich enough to satisfy completely. For the Mousse 150g (5oz) good quality dark chocolate (70–75% cocoa solids), roughly chopped 120ml (8 tbsp) aquafaba, at room temperature — from a can of unsalted or low-salt chickpeas, or homemade ⅛ tsp cream of tartar 2 tbsp caster sugar or icing sugar (optional — the chocolate provides sweetness; taste before adding) 1 tsp vanilla extract Pinch of fine sea salt Optional Flavour Additions (choose one) 1 tbsp espresso or very strong coffee — deepens the chocolate without adding coffee flavour 1 tbsp orange liqueur (Cointreau or Grand Marnier) — classic pairing ½ tsp ground cardamom — adds a floral, spiced note in the Levantine tradition Pinch of cayenne — a very small amount adds warmth that amplifies the chocolate To Serve Flaky sea salt, for finishing Fresh raspberries or sliced strawberries Shaved dark chocolate or cocoa powder, dusted A small sprig of fresh mint Method 1. Melt the Chocolate Place the chopped chocolate in a heatproof bowl set over a saucepan of barely simmering water — the bowl should not touch the water. Stir gently until the chocolate is completely melted and smooth. Remove from the heat and set aside to cool to room temperature — this is important. If the chocolate is too hot when the aquafaba foam is folded in, it will deflate the foam and the mousse will be dense rather than airy. The chocolate should feel just barely warm to the touch before you proceed. Stir in the vanilla extract, salt, and any optional flavour addition at this point. Set aside. 2. Whip the Aquafaba Ensure your bowl and beaters are completely clean and dry — any trace of fat or moisture will prevent the foam from forming. This is the same principle as whipping egg whites: fat is the enemy of foam. Pour the room-temperature aquafaba into the bowl and add the cream of tartar. Begin whipping on medium speed for 2 minutes, then increase to high. The liquid will first turn opaque and foamy, then begin to build volume and structure. Soft peaks will form at around 3–4 minutes; stiff, glossy peaks at 5–8 minutes. The foam is ready when it holds a peak that does not droop when you lift the beater — it should look like a meringue. If using sugar, add it gradually once soft peaks have formed — a tablespoon at a time — continuing to whip until the foam is stiff and glossy. The sugar stabilises the foam and helps it hold its structure through the folding and chilling process. 3. Fold Together This is the most critical step. The goal is to combine the chocolate and the foam while preserving as much air as possible. Deflating the foam here is the most common mistake — and it produces a mousse that is dense and fudgy rather than light and airy. Add roughly one-quarter of the whipped aquafaba to the cooled chocolate and stir vigorously — this first addition is a sacrifice, used to loosen the chocolate and bring it to a consistency that will accept the remaining foam without deflating it. Do not worry about being gentle here. Add the remaining foam in two additions, folding gently with a large rubber spatula. Use a wide, sweeping motion — down through the centre, up the side, and over the top — rotating the bowl a quarter turn with each fold. Stop as soon as the mixture is just combined and no white streaks remain. A few small streaks are preferable to over-folding. The mixture should look airy and slightly marbled. 4. Set and Chill Spoon or pour the mousse into individual serving glasses, ramekins, or a single large bowl. Do not tap or shake the glasses — this will deflate the foam. Cover loosely with cling film and refrigerate for a minimum of 2 hours, or overnight. The mousse will firm up as the chocolate sets around the foam structure. The mousse is ready when it holds its shape when a spoon is drawn across the surface but still has a slight wobble in the centre — like a just-set panna cotta. 5. Finish and Serve Remove from the fridge 10 minutes before serving — the flavour of dark chocolate is more pronounced at slightly above fridge temperature. Finish with a pinch of flaky sea salt (strongly encouraged — salt amplifies chocolate in the same way it amplifies everything else), a few fresh raspberries or strawberries, and a dusting of cocoa powder or shaved chocolate. Serve immediately. Notes & Variations Chocolate quality matters more here than in almost any other recipe. With so few ingredients, the chocolate is the flavour. Use the best 70–75% dark chocolate you can find — single-origin if possible. Avoid chocolate chips, which contain stabilisers that affect how the chocolate melts and sets. Room temperature is important in two places. The aquafaba must be at room temperature to whip properly (cold aquafaba whips less efficiently). The chocolate must be cooled to room temperature before folding (hot chocolate deflates the foam instantly). Both matter. The cream of tartar is strongly recommended for the most stable mousse. It stabilises the aquafaba foam and helps it hold its structure through the folding process and the chilling time. Aquafaba can whip without it, but the foam will be less reliable and may weep sooner. Sweetness is a personal call. Dark chocolate at 70–75% provides significant sweetness on its own. Taste the melted chocolate before deciding whether to add sugar to the foam. Many people find no additional sugar is needed; others prefer a slightly sweeter result. Both are valid. The espresso addition: A tablespoon of espresso or very strong coffee stirred into the melted chocolate does not make the mousse taste of coffee — it deepens and amplifies the chocolate flavour in a way that is difficult to identify but immediately noticeable. Highly recommended. Stability over time: Aquafaba mousse is less stable than egg-white mousse and will begin to weep slightly after 24 hours in the fridge. It is best eaten within 24 hours of making. Do not freeze. Allergen note: Aquafaba is derived from chickpeas, which are a legume and a recognised allergen. This recipe is not suitable for those with legume or chickpea allergies.
