Heat continues to move inward, raising the core temperature even after cooking stops. This is called carry-over cooking. For a thick steak or roast, carry-over can raise the internal temperature by 3–5°C. Pull the food from heat when it's 3–5°C below your target, then rest it. For thinner cuts, carry-over is minimal — pull at or just below target. This is why resting meat matters: it allows carry-over to complete and juices to redistribute before cutting.
