This method works in a pinch but offers less control and can easily overheat the chocolate. How to Tell If Your Chocolate Is Properly Tempered The best test is simple: dip a piece of parchment or a knife into the chocolate and let it sit at room temperature (18–21°C / 64–70°F). Properly tempered chocolate should: Set within 3–5 minutes Have a smooth, glossy surface Release easily from the parchment Snap cleanly when broken If it stays soft, streaky, or dull, it's not properly tempered. You can re-melt and try again—chocolate is forgiving that way. Common Mistakes (and How to Avoid Them) Overheating the chocolate: Going even a few degrees too high can ruin the temper.
