Why This Recipe
A great barbecue sauce shouldn't simply be sweet—it should have depth.
This signature sauce was developed to be the kind of recipe every home cook keeps in the refrigerator. Rich tomato, dark brown sugar, and molasses provide body and sweetness, while apple cider vinegar brings brightness. Worcestershire, mustard, garlic, smoked paprika, and a touch of cayenne create layers of savoury, smoky flavour that taste as though they've simmered for hours.
Unlike many store-bought sauces that rely heavily on corn syrup and artificial smoke flavouring, this recipe lets real ingredients do the work. It is thick enough for burgers and ribs, yet versatile enough to brush over grilled chicken, stir into baked beans, glaze meatloaf, or use as a dipping sauce for fries and roasted vegetables.
Like many great pantry staples, it becomes even better after a day in the refrigerator. To start with tomatoes rather than ketchup, see our Heritage BBQ Sauce recipe.
Ingredients
The Base
-
2 cups (500 ml) ketchup
-
¼ cup (60 ml) tomato paste
-
⅓ cup (80 ml) apple cider vinegar
-
⅓ cup (70 g) packed dark brown sugar
-
¼ cup (85 g) unsulphured molasses
-
2 tablespoons honey
The Flavour Builders
-
2 tablespoons Worcestershire sauce
-
1 tablespoon Dijon mustard
-
1 tablespoon yellow mustard
-
1 tablespoon apple juice (optional, for extra fruitiness)
Seasonings
-
2 teaspoons smoked paprika
-
1 teaspoon sweet paprika
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
½ teaspoon freshly ground black pepper
-
½ teaspoon kosher salt
-
¼ teaspoon cayenne pepper (optional)
-
¼ teaspoon ground cumin
Directions
- Combine Everything — Add all ingredients to a medium saucepan and whisk until completely smooth.
- Simmer Gently — Bring to a gentle simmer over medium heat. Reduce the heat to low and cook for 20–25 minutes, stirring occasionally, until the sauce has thickened.
- Taste and Adjust — Taste the finished sauce. Add another splash of vinegar if you prefer it tangier, another tablespoon of brown sugar if you'd like it sweeter, cayenne or chipotle powder for more heat, or a tablespoon of water if the sauce becomes thicker than desired.
- Cool — Allow the sauce to cool before transferring it to sterilised jars or airtight containers. Refrigerate overnight for the best flavour.

Grounded Kitchen Secrets
Let Time Do the Work
Freshly made BBQ sauce is delicious, but after 24 hours the flavours become noticeably richer and more balanced.
Want Restaurant Flavour?
A teaspoon of liquid smoke adds classic barbecue flavour if you aren't cooking over charcoal or wood. Use it sparingly—a little goes a long way.
For Sticky Glazes
Brush the sauce onto meat during the final 10–15 minutes of cooking. Applying it too early can cause the sugars to burn.
Make It Smoother
Blend the finished sauce with an immersion blender for an ultra-silky texture that's perfect for burgers and sandwiches.
Build Layers
For exceptional barbecue, season the meat first with a dry rub, then finish with this sauce near the end of cooking. The combination creates deeper flavour than sauce alone.
Variations
Smoky Chipotle
Add 1–2 chopped chipotle peppers in adobo and 1 teaspoon adobo sauce. Rich, smoky, and gently spicy.
Maple BBQ
Replace the honey with pure maple syrup. A Canadian-inspired version that's especially good with pork and salmon.
Bourbon BBQ
Add ¼ cup bourbon. Simmer an additional 10 minutes to cook off the alcohol and concentrate the flavour.
Carolina Style
Reduce the ketchup by half and increase the vinegar to ½ cup. Add an extra tablespoon of yellow mustard for a tangier, lighter sauce.
Serving Ideas
This sauce is excellent with slow-cooked pulled pork, grilled chicken, baby back ribs, burgers, meatloaf, oven-baked chicken wings, baked beans, smoked sausages, roasted potatoes, and as a dipping sauce for fries or onion rings.
Storage
Refrigerate in an airtight container for up to 3 weeks.
Freeze for up to 3 months.
Stir well before each use if any separation occurs.
