Rustic Lentil Cottage Pie

Ingredients

    • 2 tablespoons olive oil

    • 1 large onion, diced

    • 2 carrots, diced

    • 2 celery stalks, diced

    • 4 cloves garlic, minced

    • 2 tablespoons tomato paste

    • 2 cups (400 g) dried brown lentils, rinsed

    • 4 cups vegetable or chicken broth

    • 1 tablespoon Worcestershire sauce

    • 1 teaspoon dried thyme

    • ½ teaspoon dried rosemary

    • 1 teaspoon smoked paprika (optional)

    • 1 cup frozen peas

    • Salt and freshly ground black pepper, to taste

    • 2½ pounds (1.1 kg) potatoes, peeled and chopped

    • 4 tablespoons butter

    • ½ cup milk or cream

    • Salt and pepper

    • ½ cup grated cheddar cheese (optional, for a golden crust)

    Directions

    1. Cook the Potatoes

      Place the potatoes into a large pot of salted water and bring to a boil. Cook for 15–20 minutes until fork tender. Drain well and mash with the butter and milk until smooth. Season generously with salt and pepper. Set aside.

    2. Build the Filling

      Heat the olive oil in a large Dutch oven or deep skillet over medium heat. Cook the onion, carrots, and celery for about 8 minutes until softened. Add the garlic and cook for another minute. Stir in the tomato paste and cook for 2 minutes to caramelize it slightly. Add the thyme, rosemary, and smoked paprika.

    3. Simmer

      Add the lentils, broth, and Worcestershire sauce. Bring to a gentle boil. Reduce to a simmer and cook uncovered for about 30–35 minutes, stirring occasionally, until the lentils are tender and most of the liquid has reduced into a thick gravy. If the mixture becomes too thick before the lentils are cooked, simply add another splash of broth or water. Fold in the frozen peas. Taste and season generously with salt and pepper.

    4. Assemble

      Preheat the oven to 400°F (200°C). Transfer the lentil mixture to a 9 × 13-inch baking dish. Spread the mashed potatoes evenly over the filling. Create ridges with a fork—those little peaks become beautifully browned in the oven. Sprinkle with cheddar cheese if using.

    5. Bake

      Bake for 20–25 minutes until bubbling around the edges. For an extra golden top, broil for 2–3 minutes. Allow the pie to rest for 10 minutes before serving.
