A simple, flavourful side dish that celebrates Canadian maple syrup with tender roasted carrots and tangy Dijon mustard. Perfect for weeknight dinners or special occasions.
Ingredients

680 g (1.5 lbs) carrots, peeled and cut into sticks

2 tbsp olive oil

2 tbsp pure maple syrup

1 tbsp Dijon mustard

2 cloves garlic, minced

½ tsp fresh thyme leaves (or ¼ tsp dried)

Salt and freshly ground pepper to taste

1 tbsp fresh parsley, chopped (for garnish)
Directions
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, garlic, and thyme.
Add carrot sticks to the bowl and toss until evenly coated.
Spread carrots in a single layer on the prepared baking sheet. Season with salt and pepper.
Roast for 25-30 minutes, flipping halfway through, until carrots are tender and caramelised at the edges.
Transfer to a serving dish and garnish with fresh parsley. Serve warm.
