Ingredients
3 cups zucchini, diced
4 eggs
½ cup Parmesan cheese, grated
½ cup mild cheddar, grated
1 large onion, chopped
1 cup Bisquick
½ cup vegetable oil
2 tbsp fresh parsley, chopped (or substitute oregano)
Directions
- Preheat your oven to 350°F (175°C). Lightly grease two pie plates.
- Combine all ingredients in a large bowl and mix until well incorporated.
- Divide the mixture evenly between the two prepared pie plates.
- Bake for 30–40 minutes, or until the tops are golden and the centres are set. A toothpick inserted in the middle should come out clean.
