A simple, wholesome banana bread made with ripe bananas and pantry staples. Naturally sweetened, tender, and perfect for breakfast or an afternoon snack.
Ingredients

3 ripe bananas, mashed

1/3 cup melted butter or coconut oil

1/2 cup maple syrup or honey

2 eggs

1 tsp vanilla extract

1 tsp baking soda

Pinch of salt (1/4 tsp)

1 1/2 cups all-purpose or whole wheat flour
Directions
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
In a large bowl, mash the ripe bananas until smooth.
Stir in the melted butter or coconut oil, then mix in maple syrup (or honey), eggs, and vanilla.
Sprinkle in baking soda and salt; stir to combine.
Fold in the flour until just incorporated — do not overmix.
Pour batter into the prepared loaf pan.
Bake for 55–60 minutes, or until a toothpick inserted in the centre comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes & Tips
For a lighter texture
This loaf is naturally tender and moist. If you prefer a slightly lighter crumb—especially when using whole wheat flour—add ½ tsp baking powder along with the baking soda.
Use very ripe bananas
The darker and spottier, the better. Overripe bananas add natural sweetness and deeper flavour.
Adjust sweetness to taste
This banana bread is gently sweet. For a sweeter loaf, increase maple syrup or honey to ⅔ cup.
Don’t skip the salt
Use ¼ tsp salt to enhance flavour and balance the sweetness.
Optional add-ins
For variation, fold in:
– ½ cup chopped walnuts
– ½ cup chocolate chips
– ½ tsp cinnamon for warmth
– ½ to ¾ cup fresh or frozen blueberries
- If using frozen:
- Add them straight from the freezer (don’t thaw) to prevent bleeding and excess moisture.
- Lightly coat in flour (optional but helpful):
- Toss blueberries with 1–2 tsp flour before folding in—this helps prevent sinking.
- Fold gently:
- Blueberries can burst easily and turn the batter purple if overmixed.
