Soft, savory, and filling — this easy breakfast egg and sausage bake comes together with minimal prep and flexible ingredients. Perfect for feeding a crowd or making ahead.
Ingredients

6 large eggs

2 cups (480ml) milk

4 cups cubed bread (day-old works best)

1 cup shredded cheese (cheddar or mozzarella)

1 cup cooked breakfast sausage (or ham/bacon)

½ cup diced onion

½ cup diced bell pepper

1 tsp salt

½ tsp black pepper

½ tsp garlic powder (optional)
Directions
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Layer the base: Spread bread cubes evenly in the dish. Top with sausage, veggies, and cheese.
- Mix the custard: In a bowl, whisk eggs, milk, salt, pepper, and garlic powder.
- Pour & soak: Pour over the bread mixture, pressing lightly so everything absorbs the liquid.
Bake uncovered for 40–45 minutes, until set in the center and golden on top.
Rest 5–10 minutes before slicing.
