Pure maple syrup balances the saltiness, and a splash of warm water brings it to a silky, pourable consistency. Endlessly versatile and ready in minutes. This recipe is naturally vegan — use maple syrup rather than honey to keep it so. To make it gluten-free, substitute the soy sauce with tamari.

Creamy Thai Peanut Dressing (Peanut Base)

Ingredients

  • 2 tbsp creamy peanut butter

  • 1 tbsp fresh lime juice

  • 1 tbsp soy sauce (or tamari for gluten-free)

  • 1 tsp pure maple syrup (or honey)

  • 1 tsp grated fresh ginger

  • 1–2 tbsp warm water (to thin to desired consistency)

Directions

  1. Combine peanut butter, lime juice, soy sauce, maple syrup, and grated ginger in a small bowl.

  2. Whisk together until smooth and fully combined.

  3. Add warm water one tablespoon at a time, whisking until the dressing reaches your desired consistency.

  4. Taste and adjust — add more lime juice for brightness, soy sauce for depth, maple syrup for sweetness, or ginger for warmth.

  5. Use immediately or store in a sealed jar in the refrigerator for up to 5 days. Stir well and add a splash of warm water to loosen before each use.
